Update the readme with verisions of modules you are using for local set up

Hey folks, I have something to update in the readme

• Please clarify the typst version your template is designed for.
  • Typst is still in a beta phase resulting in some compatibility issues (e.g. polylux 0.3.1 is not compatible with typst 0.13.1 and your polylux template is not compatible with polylux 0.4.0). This may be irrelevant to you, as you are relying on your docker with a constant typst version, but is not so clear for people that set it up locally.
